- Remove the ribs from the smoker. Wrap each rib with a slice of thin-cut bacon. Increase the smoker temperature to 325-350°F. Return the ribs to the smoker and cook until the bacon is crispy and the ribs reach an internal temperature of at least 165°F, about 20-30 minutes.
- Brush the ribs with barbecue sauce and let them cook for another 5 minutes to set the glaze.
- Remove the ribs from the smoker and let them rest for 10 minutes. Add more sauce if you like, and serve hot.
