Buffalo Wings… I know what you’re going to say… especially if you’re from upstate New York. It’s not a buffalo wing unless it’s cooked a certain and specific way (which interestingly varies based on whoever is saying it.). Usually it’s a buffalo wing that has been flash fried and tossed in a mixture of buffalo sauce and butter. The purists will say that if it’s not the original wing that came from the Anchor Bar in Buffalo, NY, it’s not the real deal.

I understand this to a certain extent, but honestly I love wings so much I’m not a follower of this. Trust me, I would feel the same way about a brisket that someone cooked in their oven and tried to pass off as BBQ. I get it. I really do.
Buffalo Wings are the ultimate party food. Whether you’re eating them as a traditional wing, or getting fancy with the flavors they are absolutely hard to beat.

Let’s Prep:
Let’s make some Buffalo Wings!
Time to start making the buffalo wings – let’s prep the food. Every chance I can I start with the pre-cut, pre-trimmed drums and flappers. When I buy them at the grocery store, they usually come in packs of about 10 wings give or take a couple so it’s the perfect size for me.
To start making the buffalo wings, make sure you’ve got a clean workspace and prep area, as well as you have all of your ingredients within arms reach – that’ll make this buffalo wings recipe more fun to cook.
First step is to mix up the dry ingredients to make the ranch chicken rub. Easy to do and if you end up making too much, you can put it into a leftover spice bottle and put in your cupboard until you’re ready to use it again when you’re ready to make more chicken bacon ranch buffalo wings.
Now that you’ve gotten the ranch rub made, (if you haven’t already) cook and chop some crispy bacon, and set aside – this will add a ton of flavor later on as a garnish. How do you beat bacon as a garnish?!
Once you’ve gotten your ranch rub mixed up, pour generously onto your chicken wings. Make sure to coat them well and allow the chicken’s moisture to absorb the flavor for between 5-10 minutes. (Don’t let your wings get warm on the counter though!). Safety first.
Let’s Cook:
To cook these – I used the Roto-Q 360 (use code: cookingintheyard for 20% off). This was a super easy way to cook these wings and they came out as the juiciest wings I’ve ever had. This is a really interesting device and I haven’t used one like it before. It’s a rotisserie basket that uses kinetic energy to work. You put your food in, and wind it up, then flip a switch to release the basket, and it spins by itself. Meaning no cords, or wires that you have to deal with.
I cooked these in my pellet smoker, however it works great in your oven, or grill as well. I was impressed. These wings cooked for 35-40 minutes, I pulled the wings off when they were 185F – this will allow them a little room for carry over cooking, and not allowing them to dry out.
Let’s Eat:
When the wings come plate them, and garnish with your buffalo ranch dressing and sprinkle the chopped crispy bacon over the top. Measure the buffalo ranch sauce with your heart and use as much or little as you like. This can also be used as a dipping sauce, however I like putting it on top so that it helps the bacon stick to the wings.
Chicken Bacon Ranch Buffalo Wings
Ingredients
- 1.5 lbs Chicken Wings
- 5 strips bacon crispy
Chicken Seasoning
- 1 TBSP Ranch Seasoning
- 1 TBSP Corn Starch
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Garlic Powder
- 1/2 tsp Smoked Paprika
Buffalo Ranch
- 1/4 C Ranch Dressing
- 1/4 C Buffalo Sauce
Instructions
- Preheat your grill/oven/smoker to 350F
- Mix all ingredients well to combine for chicken rub
- Cover wings liberally in rub
- Place wings in your RotoQ rotisserie, or on wire rack
- Cook your wings until they hit 185F, and no higher than 190F
- Mix 50/50 mix of ranch and buffalo sauce
- Chop crispy bacon strips to use as garnish
- Remove wings from heat and add buffalo ranch and bacon
