Grilled Cheese Smash burger

Grilled Cheese Smash burger. I’ll just go ahead and say that again… really just because I like saying it. It’s a smash burger with 2 patties that are made into a smash burger, then instead of buns for the burger, the top and bottom are grilled cheese sandwiches. What could be better ?

Let’s talk about the smash burger. The process to make them is really simple, and there seems to be 2 different camps of people regarding these. Those that have made them, or had them, and love them. And those that have never had them that don’t understand how delicious they are. Based on my experience it’s pretty cut and dry from that standpoint.

A smash burger in it’s truest form is a ball of ground beef (your preference, but I prefer either an 80/20 chuck mix, or brisket burger, where a brisket is ground up formed into the burger. The process of making a smash burger is really simple. Heat up your griddle, or frying pan place the ball of meat down, let it sit for about 10-20 seconds to give it a little bit of a sear, then press it down as hard as you can with a burger press or smasher. This results in a thin patty with an unbelievable tasty crust that’s cooked in it’s own grease.

Let’s Prep:

The first part of the prepping process was to make my Burger Sauce Recipe – this is a simple mix of common ingredients that are probably in your pantry and fridge already, but when they come together in the right quantities, something awesome happens. I hope you love it as much as I do. Mix up the ingredients and put them in the fridge while you’re cooking your smash burgers. You’ll want to put it on ASAP to be able to eat these quickly!

To prep this recipe, I’m putting my own twist on this common classic. I always wondered what it would be like to use grilled cheese sandwiches instead of hamburger buns, so I decided to give it a try. I wasn’t disappointed, and I’ll definitely be doing it again. I simply heated up my flattop griddle and put a couple tablespoons of butter down to melt, then put a piece of white bread on the butter to start getting crispy.

I followed that with 2 slices of American cheese, and the top layer of bread. Once the bottom was golden brown, flip it over and cook the other side until that’s golden brown and the cheese is melted. That’s it – grilled cheese buns are complete! This whole process should take less than 5 minutes!

Let’s Cook:

Making a smash burger couldn’t be any easier. Place your meat ball on the griddle – I prefer a 2-3 oz ball for these as I typically like to do a double stack burger, at this size it also helps to make a manageable ‘bun-sized’ patty so that you don’t have an 18 inch diameter burger once you’re done smashing it.

Once you’ve flattened out your smash burger, season it well with your favorite burger seasoning. Mine is O.M.G. Seasoning – you can get it at the link and you’ll absolutely love it! It’s a blend of salt, pepper & garlic that perfectly compliments the burgers.

Once you’ve got a nice crust on the heated side, and you start to see the top part cooking through, it’s time to flip the burger. Flip and let cook for another 2 – minutes until cooked through, and you’re all done!

Now that everything is cooked and the smash burgers are ready, it’s time to assemble our Grilled Cheese Smash Burgers. From the bottom up:

  • Grilled Cheese Sandwich
  • 2 smash burger patties
  • Burger Sauce
  • Grilled Cheese Sandwich

Ingredients

  • 1 lb ground beef divided into 4
  • 8 slices White Bread
  • 8 slices American Cheese sliced
  • Butter To grease griddle

Burger Sauce

  • 1 C Mayonnaise
  • 1/2 C Ketchup
  • 1 tsp Smoked Paprika optional
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 2 TBSP Dill Pickle Juice

Instructions

  • Mix all ingredients for burger sauce together, stirring well to incorporate, then refrigerate until ready

Grilled Cheese "Buns" (below instructions x2)

  • Heat up griddle to medium high and melt a liberal amount of butter
  • Lay down a slice of white bread in the melted butter with 2 slices of American Cheese, then the top piece of bread
  • Cook for 2-3 minutes or until bottom has gotten golden brown without burning
  • Flip and cook top part
  • Set aside when cooked.

Smashburgers

  • Make 1/4 pound ground beef balls
  • Place on hot griddle and press down firmly to flatten. Press as much as you can.
  • Cook for 60-90 seconds per side, seasoning both sides
  • Assemble burgers with grilled cheese on bottom, 2 patties in middle with sauce, and another grilled cheese on top
