One of my favorite appetizer bites. It’s simple to make, and is always a crowd pleaser. This easy appetizer recipe has familiar flavors that everyone loves, presented in a unique way with the added smoke flavor – everyone is not only going to love this easy appetizer recipe, but they’ll be asking you where you got it!

Let’s Prep:
Prepping for this easy appetizer recipe is pretty simple. As always – start with a clean work surface and have your ingredients at arms reach this will make the cooking process much easier and more fun. Start by prepping your bacon – cut the entire slab in half vertically – this will give you the size needed to wrap your cracker in bacon.
As far as the jalapeno goes, this will vary by the size of the pepper itself that you get from the store. Factors like time of year, and quality of the grocery store will make this vary but to give you an idea of the size of the slices of pepper, I usually get about 8 – 10 slices per jalapeno pepper.

Continue prepping this easy appetizer recipe by laying down your slice of back and stacking the cream cheese pat and sliced jalapeno on top of the Ritz cracker.

Easy Appetizer Recipe ? Easiest!
Place your bacon wrapped jalapeno popper crackers with the bacon seam side down. This will ensure that that everything holds together and the bacon doesn’t curl or unravel or separate while cooking.
Season the bacon liberally with Jack of all Rubs then you’re ready for the smoker. NOTE that this can be done in the oven as well – you’ll obviously just be missing out on the smoke flavor from the smoker. Cooking these is a breeze since you’ve only got one ingredient in this easy appetizer recipe that needs to be cooked and that’s the bacon.
Let’s Eat:
Once the bacon is a dark amber color, (yet not turning black or burning) take the bites off the smoker and let them rest for 5-10 minutes. This is going to do 2 things for you.
1.) The bacon will crisp up as the oil and grease runs off and the moisture in the slices evaporates off.
2.) It’ll allow them to cool down. These will be HOT, and especially with the melted cream cheese inside that will be hot and soft. Allow them to cool down for a few minutes and you won’t be disappointed!

Ingredients
- 2 Jalapenos Sliced
- 20 Ritz Crackers
- 10 Bacon Slices regular cut, not thick
- 8 oz cream cheese
Instructions
- Preheat your oven or smoker to 225F
- Prepare bacon by slicing it vertically to cut in half
- Slice your jalapeños and cream cheese
- Stack jalapeno slice and cream cheese pat on top of Ritz cracker
- Wrap in the half-slice of bacon and make sure the seam for the bacon is on bottom
- Season liberally with Jack of all Rubs seasoning
- Smoke for 15 minutes at 225F
- Increase temperature to 400F for 25-30 minutes until bacon is cooked
- Allow to rest for 5-10 minutes before serving.
