Stuffed Pancake Recipe on the Griddle – Perfect Pancakes!

This is a new recipe that I’m willing to bet you probably haven’t seen before.  If you have, then awesome!  This is the perfect pancake recipe for anyone who likes a twist on old classic flavors like the sweetness of syrup or the saltiness of bacon for example.  The gooeyness of the cheese certainly doesn’t hurt either!

Delicious Pancake Recipe!

If you follow me on Instagram, you’ll notice that when I make my recipe videos everything is nearby by so the videos can be made quickly and I can spend time eating delicious food, instead of making it.  That’s exactly what we want to do here.  Have all of your ingredients at arms-reach when starting and it’ll make cooking a lot more easy and fun.  Additionally, make sure you have a clean workspace when you start.  This will ensure that you’re not only prepping your food in a way that’s safe from a food safety perspective but also that you can minimize loss of time from having to clean as you go.  

When we talk about getting ready for this cook – I prefer premixed pancake batter like Hungry Jack or similar and a large bowl, nice and easy!  It just makes it easier, and there are going to be so many flavors in these tiny bites that you won’t even notice the difference from homemade.  If you have a homemade batter recipe that you like to use though, feel free!  

Regardless of how you make it, just make sure that your batter is smooth and mostly free of lumps (small lumps are fine) from unmixed ingredients, this will make sure that you have a nice smooth texture and taste when cooked.  Add your water or milk slowly to the powder mixes and stir slowly and evenly-  make sure that there’s no powder left on the sides of the bowl.

Note:  either way that you mix your batter, be careful to only mix it enough that gets rid of the lumps with your wet ingredients and is smooth, over-mixing will cause the batter to thicken and you’ll be left with tough pancakes instead of perfect pancakes like this pancake recipe!

Now that you’ve gotten all of your dry ingredients ready and mixed, it’s time to get started.  I prefer adding the batter to a squeeze bottle, however, you don’t need to – you can use a large spoon or if you have a steady hand you can just pour from the bowl, or use a cup of batter to go down on the griddle.

Cook your bacon on the non-stick griddle or non-stick pan in a single layer until crispy and set aside.  Make sure the bacon is how you like it because this will add a lot of flavor.  I prefer the bacon to be as crispy as possible, without it burning.  I use my flattop griddle outside, however, you can use an indoor electric griddle, electric skillet, or cast iron frying pan set to 375F to 400F.

 I’ve found this to be the best temperature to use.  At a higher temperature, you run the risk of burning the bacon, and at  lower temperatures it won’t cook through the right way.  Regardless of how you’re cooking it though, be on the lookout for hot spots

When the bacon is cooked, remove from the heat and set aside temporarily.  Beat your eggs with Oh My Garlic (discount link) seasoning to get them BIG some flavor.  Whisk them together in a separate bowl until the whites and yolks are fully combined.  Grab and grease your ring molds, and let’s get started!   This will make sure nothing sticks, I use a nonstick cooking spray for this.

Let’s Cook:

My favorite part!  Let’s get griddle cooking!  It doesn’t matter what you’re cooking on, this is a simple process – follow these instructions, and you’ll be all set.  Cook the eggs in the ring mold with a couple of torn pieces of bacon inside of it.  You want about 2 tablespoons of eggs in each mold, let it cook for about 45-60 seconds until it firms up, flip them, and cook for another 20-30 seconds melting a slice of cheese on top, and set aside when done.

Grease your ring molds and put down a small amount of pancake batter in them, to about 25% of the height of the mold. Immediately put your bacon, egg, and cheese mix in that batter and push it down slightly.  Fill the rest of the ring mold with pancake batter to cover.  Add a swirl of maple syrup into the top layer of batter for some sweetness.  You could also put in some chocolate chips as a variable as well.

One of the great things about cooking fluffy pancakes recipe on a griddle is that you have complete control over the temperature. A medium heat setting is ideal, so if you’re using a Blackstone or another flat-top grill, keep it between 375°F and 400°F for the best results. Cooking at too high of a temperature can burn the pancakes recipe, while a lower temperature might not give them that golden brown finish we’re after.

Once they are cooking in the ring mold, add a dome and cook for about 3 minutes.  After that, flip and cook for another 2-3 minutes.  When they are golden brown and you don’t see any batter jiggling or anything that looks wet you’re in business!  Keep the ring mold on them the entire time – remove when done cooking.

Now it’s time for my favorite part!  We get to enjoy the fluffy texture of the fluffy pancakes recipe combined with the other key ingredients that are bringing the flavor!  You can also freeze these at this point, and save them for later!    There are lots of different ways to enjoy this.  As a sandwich, covered in maple syrup or served with fruit.

Best Tips for the Best Pancakes Recipe!

  1. Temperature Control: As I mentioned earlier, cooking pancakes recipe on a griddle requires careful attention to the temperature. You want to keep your griddle at a medium setting, between 375°F and 400 degrees f. If the temperature is too high, you’ll end up with burnt pancakes. Too low, and they won’t cook through properly.
  2. Test Pancake: Always make a test pancake first to ensure your griddle is at the right temperature. It’s the best way to avoid any mishaps with your pancake breakfasts.
  3. Golden Brown Perfection: Your goal is to achieve a golden brown color on each side of the pancakes. If you notice the pancakes turning too dark or not browning enough, adjust your temperature as needed.
  4. Griddle Tips: Whether you’re using a Blackstone, Loco, or even a cast iron griddle, make sure it’s well-seasoned or non-stick for the best results. A little oil on the surface goes a long way in ensuring that your pancakes don’t stick.
  5. Flipping Pancakes: Be patient when flipping. Wait for those little bubbles to form on the surface before you flip. That’s how you know they’re ready to be turned for even cooking on both sides.

Stuffed Pancakes on the Griddle – Perfect Recipe

Ingredients

  • 1 C Pancake Mix Hungry Jack, or similar
  • 4 Slices of Bacon crispy
  • 2 Eggs beaten and seasoned
  • 1 TSP Oh my Garlic Seasoning
  • 4 American Cheese slices
  • 1 TBSP Butter
  • 4 TBSP Maple Syrup

Instructions

  • Start by preheating your griddle to 375F – 400F
  • Mix pancake batter according to the directions on the package, and pour batter into a squeeze bottle
  • On a hot griddle, cook bacon until crispy and set aside
  • Grease a ring mold and add 2 TBSP of beaten egg mixture in, add 4-5 pieces of the crispy bacon, torn apart. Let cook for about 45-60 seconds, remove ring mold and flip. Cook for about 20-30 seconds or until done. Add American cheese slice to each one, melt and set aside.
  • Grease the ring mold, and add a thin layer of pancake batter to the bottom, then the bacon, egg, & cheese round. Press that down into the bottom batter slightly. Cover the top with pancake syrup until just below the top of the ring mold. Add maple syrup to taste.
  • Cover with a dome and cook for 3 minutes. Flip and cook for another 2-3 minutes. Remove ring mold and remove stuffed pancake from griddle.
  • Serve hot
