When I first thought about bacon cheeseburger bombs, I knew I had to try them. Juicy beef, cheddar cheese, and crispy bacon slices? That’s my kind of party food. If you’re looking for an easy recipe that doubles as one of the best party food ideas, this one’s got you covered. Let me walk you through how to make these mouthwatering bites.

Let’s Prep:

A gloved hand holding a meatball with a piece of cheese inside, on a wooden surface.

The first thing I do is gather all my ingredients. You’ll need 1 pound of ground beef, an egg, burger seasoning, cheddar cheese, and, of course, bacon slices. Start by cubing the cheddar cheese into little ½ to ¾-inch squares. These cubes are going to be the gooey, melty cheese core of our bacon cheeseburger bombs.

Cubes of cheddar cheese are arranged on a dark wooden cutting board, with a large stainless steel knife resting in the background.

Next, slice your bacon slices in half. You’ll be wrapping these around the meatballs, so the half slices work perfectly.

In a mixing bowl, combine the ground beef, egg, and burger seasoning. Mix it all together until it’s fully combined, but don’t overwork the meat. Overmixing can make your juicy ground beef tough, and no one wants that.

If you’re making these for game day, you can prep the meatballs ahead of time. Store them in an airtight container in the fridge, and they’ll be ready to cook when your guests arrive. Prepping ahead makes it easier to focus on entertaining.

Let’s Cook:

Now it’s time to form the bombs! Grab about 2-3 ounces of the beef mixture and roll it into a ball. Take one of those cheese cubes and stuff it right in the center. Make sure to pinch the seams tightly so the cheese doesn’t ooze out while cooking.

Two packs of raw bacon slices are neatly arranged on a textured wooden cutting board. The bacon features layers of pink meat and white fat, providing a striped appearance.

Lay two half bacon slices in an X-shape on your work surface and place the meatball in the center. Wrap the bacon slices around the meatball, securing them with long toothpicks. This step is key to getting that perfect crispy bacon crust.

Preheat your smoker to medium heat, about 350°F. Place the bombs on a foil-lined cookie sheet or directly on the smoker grates. If you’re using a baking sheet, give it a quick spray with cooking spray to prevent sticking. Let them cook for 30-35 minutes, or until the meat reaches an internal temperature of 165°F.

If you don’t have a smoker, don’t worry. You can bake these in the oven or use an air fryer. Both methods deliver great results, and the bacon cheeseburger bombs still come out juicy and delicious. Just keep an eye on the golden brown bacon crust—it’s the sign of perfection!

A piece of bacon-wrapped food item, possibly a date or appetizer, is placed on a wooden cutting board with a patterned surface.

Here’s where the magic happens. During the last five minutes of cooking, brush your favorite barbecue sauce over each bomb. Close the smoker lid to let the sauce glaze. This is the perfect opportunity to add that sweet, tangy flavor that takes these bombs to the next level.

Want to mix it up? Try a honey mustard glaze or even a sriracha BBQ blend. These flavor combinations give the bacon cheeseburger bombs a whole new twist while keeping them crowd-pleasers.

Let’s Eat:

Once they’re done, let the bacon cheeseburger bombs rest for about 10 minutes. This step allows the juices to redistribute, keeping the meatballs tender and moist.

These bombs are pure heaven—gooey cheddar cheese, juicy beef, and smoky crispy bacon in every bite. Serve them hot with extra barbecue sauce for dipping, or pair them with some pickle slices for a tangy contrast. They’re perfect for game day, backyard BBQs, or even as part of a 3-ingredient recipe lineup for busy nights.

Bacon-wrapped meatballs are being smoked on a grill. They are placed on a wire rack, with smoke visible around them, suggesting they are in the process of cooking. The grills interior is dark and slightly worn.

For leftovers (if there are any), store them in an airtight container in the fridge. When reheating, an air fryer is your best bet for great results—it keeps the cheesy bacon bombs crispy on the outside and gooey on the inside.

If you’re feeling adventurous, pair these bombs with a taco crescent ring for the ultimate snack spread. These dishes complement each other and make for a memorable gathering.

Variations

This bacon cheeseburger bombs recipe is super-versatile. Ingredients can be added, subtracted or swapped to make completely different flavor profiles. For example, if you’d like it spicier, you can add in some pepper jack cheese to the bacon cheeseburger bombs.

If you’re looking for a low carb option, skip the BBQ sauce glaze and serve the bombs with a side of sugar-free ranch or blue cheese dressing. You could also use turkey bacon for a leaner twist or mix ground turkey with the juicy ground beef for a lighter bite for these bacon cheeseburger bombs that’s still packed with flavor.

For a smoky flavor boost, toss some mesquite chips in your smoker. The smoky finish pairs perfectly with the crispy bacon and juicy interior.
