Bacon Wrapped Pickle Burnt Ends

This might just be the ultimate party food perfect for your next gathering.

Slice your pickles:

You can start with pre-sliced pickles from a jar, however I prefer to use whole dill pickles as I can make them as thick as I want. For this recipe you’re going to want your pickles about 3/4″ thick to provide that burst of dill flavor when you eat it. That way it’ll hold up to the other bold flavors in this delicious recipe! 

Wrap in bacon:

Once your pickles are sliced the way you want them – it’s time to get out the bacon! Pro tip: use one slice of bacon as the template-size to find the right place to slice the bacon, then slice the rest of your pieces in the same way. You want the slice of bacon to fully wrap around the pickle, but not have an excess of overlap. Make sure to put a liberal amount of your favorite BBQ Seasoning on it.  

Time to cook:

Start your smoker and get it up to temp, then it’s time to get the bacon wrapped pickles on – Pro Tip: I’m a huge fan of using wire racks to make moving these small bites on and off the smoker easily. 

Let’s make it saucy:

Once the bacon is cooked through – remove and add your brown sugar, butter, and sauce! 

Plate and serve:

Once you’re all done – stick a toothpick in them, and watch how quickly they fly off of your plate at your next party.

Ingredients

  • 5 Whole dill pickles
  • 1 lb Regular-cut bacon
  • Your favorite sweet BBQ rub
  • 4 tablespoons of Butter
  • 1/2 cup brown sugar
  • BBQ sauce

Instructions

  • Slice a whole dill pickle into roughly 3/4” slices
  • Wrap each pickle chip in a piece of regular cut bacon that’s been cut to size
  • Cover liberally in your favorite sweet BBQ rub
  • Set your grill/smoker to 400F and cook until the bacon is crispy- roughly 30-40 mins
  • Remove and add to an aluminum pan with 4TBSP Butter, 1/2C brown sugar, and enough BBQ sauce to cover
  • Put back into smoker for about 15 mins
