For example, do you want these to be spicier? Add spicy seasoning or even a jalapeno slice in it. Want them smokier, add more smoke flavor! It’s just that simple, and you and everyone you serve these bacon wrapped pickles to will love them!
Let’s Prep:
While this recipe is HUGE on flavors, it’s actually pretty simple to make with only a few ingredients needed. You can find the full list in the recipe card at the bottom. Be sure to ***print*** out the recipe to save for later! First things first, slice those pickles into rounds about 3/4-inch thick—these are the “cups” that will hold everything. The tangy kick from the pickles balances out all the smoky, cheesy goodness to come..
Cut each bacon strip to the perfect length so it wraps around each pickle slice with just a little overlap. Wrap each pickle slice with bacon, secure with a toothpick, and voila! You’ve got little “shot cups” ready to fill. This trick keeps everything snug and ready for loading.
Let’s Cook:
Time to fire up the smoker (or the oven if that’s what you’re using) to 400°F. At this temperature, the bacon wrapped pickles will get nice and crispy, while the cheese melts to gooey perfection.

Place your bacon-wrapped pickle cups on the smoker or baking sheet. Spoon a bit of the cooked ground beef into each one. Next, add some of your favorite BBQ rub or seasoning on top for an added blast of flavor. Pile on another heavy pinch of shredded cheese as well. This quick steps are going to give a balance of sweet and spice, and the cheese adds additional flavor and texture as well.
Now, pop these bacon wrapped pickles in the smoker for about 45 minutes. You’ll know they’re done when the bacon is crispy and the cheese is melted and golden-brown. Just keep an eye on them, since cooking times can vary. Once the bacon is perfectly crisp and has that beautiful amber color, sprinkle a little more shredded cheddar on top and let it melt for another 5 minutes.
Let’s Eat:
Serve these Bacon Cheeseburger Pickle Shots warm, with ranch dip on the side. I’m telling you, that ranch brings the whole thing together—it’s the perfect creamy finish against the smoky, salty, and cheesy layers. Each shot is a blend of tangy pickle, juicy beef, crispy bacon, and melty cheese. Imagine a whole cheeseburger packed into one amazing bite-sized treat!
These bacon wrapped pickles are an instant crowd-pleaser, whether you’re hosting a BBQ, having friends over for game day, or just want something a little extra for yourself. The mix of smoky, tangy, and cheesy flavors will keep everyone coming back for more. These bacon wrapped pickles will be a winner every single time! Enjoy every bite!
