Ingredients / Tools You’ll Need

1 pound of ground beef
1 box Red Lobster biscuit mix (do not prepare as directed on box)
16 ounces shredded cheddar cheese
1 teaspoon garlic powder (optional but highly recommended)
Parchment paper
Baking sheet
Mixing bowl
Pastry brush (for the garlic butter mixture)
Optional: cup mayo, pickle juice, white vinegar, sweet relish, paprika or favorite burger sauce for dipping, or big mac sauce mix..

Raw meatballs with visible bits of cheese are arranged on a metal cooling rack placed over a red baking tray, set on a wooden surface.

Instructions

Preparation
Preheat your oven to 350°F and line a baking sheet with parchment paper. In a large bowl, toss in the pound of ground beef and the full package of Red Lobster biscuit mix. It’s going to take a minute to really work the two together, but don’t give up - once they start to blend, it’ll come together.

Add in the shredded cheddar cheese and give it one last mix until the meat mixture is fully combined and cheesy throughout. If you’re like me and want a little extra punch, add a teaspoon garlic powder and a sprinkle of onion powder too. Then, form the mix into bite-sized balls about 1½ to 2 inches wide - no need for perfection here. The garlic cheeseburger bites are not going to hold their perfectly round shape while cooking, so don't worry about that.

Raw meatballs are arranged on a wire rack over a red tray inside a smoker grill, with smoke rising as they cook. A brick wall and greenery are visible in the background.

Cooking
Lay the garlic cheeseburger bites out on the baking sheet, spaced apart so they don’t touch. Pop them in the oven and bake for 25-30 minutes, until they’re golden brown and cooked through. While they’re baking, make the garlic butter mixture by using the seasoning packet from the biscuit mix.

Follow the packet instructions - usually it’s just melted butter plus the garlic herb blend. Once the bites are out of the oven, give them a few minutes to cool slightly. Then brush the tops with the garlic butter so they soak up every last bit of flavor.

Serving Suggestions
These go insanely well with dipping sauces - think favorite burger sauce, a quick blend of cup mayo, ketchup, and a splash of pickle juice. I’ve also dunked the garlic cheeseburger bites in a spicy aioli or served them next to tortilla chips and queso for a wild mash-up.
For a full-on snack spread, serve these garlic cheeseburger bites with tortilla strips, fresh pickles, and maybe a side of fries if you're feeling bold.

Recipe Notes & Pro Tips

Keep paper towels nearby because things might get a little greasy -but in the best way possible.

I’ve also experimented with adding diced jalapeños, caramelized onions, or even a cube of melted cheese in the center of each ball for a surprise. It’s like a DIY twist on garlic parmesan cheeseburger bites that you can totally customize.

And if you’ve got kids? Let them help roll the garlic cheeseburger bites into balls - it’s a great way to get them involved on busy weeknights.

The garlic cheeseburger bites reheat really well too. Just toss them in the air fryer for a few minutes and they come out hot, crispy, and still packed with flavor. They’ve even been known to sneak their way onto my breakfast plate alongside eggs, and I’m not even sorry about it. Make a double batch if you're prepping for a party - they will be gone fast.

So the next time you’re in a rush, feeding a crowd, or just want to level up your snack game, give these garlic cheeseburger bites a try. You only need a handful of ingredients, most of which you probably already have, and the flavor payoff is huge.
