Why This Recipe Works

Finely shredded mozzarella distributes more evenly through the filling and is less likely to create bulky spots that make the dough harder to seal. Keeping the filling centered with a border of dough around it also helps prevent exposed cheese or pepperoni from interfering with the seam.

The exposed mozzarella and pepperoni can brown quickly, so use the golden color of the dough and melted top cheese as visual cues near the end of baking.

Ingredients

1 tube refrigerated pizza dough
Pepperoni
Italian seasoning
Mozzarella cheese (finely shredded)
Egg wash

How to Make It

Preheat your oven to 375. Cut the pizza dough into three equal sized pieces, about three to four inches in width.

A hand brushes egg wash onto unbaked twisted pretzel dough on a baking sheet.

Lay down a strip of pepperoni in the middle of each piece of dough. Sprinkle Italian seasoning on top of the pepperoni.

Add mozzarella cheese on top of the Italian seasoning. Pinch the ends together to seal the dough with the cheese, pepperoni, and seasoning inside.

Fold the sealed dough into a pretzel shape. Place the pretzels on a cookie sheet.

Brush the pretzels with egg wash and lightly season again with Italian seasoning. Add a thin layer of mozzarella cheese on top of the pretzels, followed by more pepperoni.

Bake in the oven for 15 to 18 minutes until golden brown. Remove from oven when ready and let sit for five minutes to cool.

Tips and Variations

Pinch the seam firmly before shaping, then handle the filled dough gently so it stays sealed. Give each pretzel space on the cookie sheet so the sides can bake rather than steam together.

Let the pretzels rest briefly before serving. This gives the hot melted cheese inside time to settle and makes them easier to handle.
