If you’re anything like me, you love a brunch recipe that is also an easy recipe that combines bold flavors with a bit of a kick. That’s where my Bacon, Egg & Cheese Jalapeno Poppers come in. This easy appetizer recipe takes everything you love about breakfast and wraps it up in a spicy, bacon-wrapped jalapeño.
It’s the perfect combination of spicy, creamy, and savory—ideal for brunch, game day, or any gathering where you want to impress your guests. Whether you’re hosting a brunch with friends or looking for the perfect party appetizer for football season, these bacon-wrapped jalapeño poppers are sure to be a hit.
Let’s Prep:
The first step in this brunch recipe is prepping the fresh jalapeños. When I’m at the grocery store, I always look for fresh jalapeño peppers that are firm and bright green. These are the best for stuffing and wrapping because they hold up well during cooking. Start by slicing each jalapeño in half lengthwise, being careful not to cut off the tops or bottoms.
This keeps everything together once we start stuffing and wrapping. With a paring knife, remove the inner membranes and seeds from each jalapeño half. If you’re sensitive to spicy peppers, it’s a good idea to wear gloves during this step to avoid any uncomfortable burns from the spicy oils.
Now, let’s get the filling ready. In a small bowl, combine softened cream cheese with a touch of garlic powder to create a tangy, creamy base for our filling. I love adding some sharp cheddar cheese to this mixture for extra flavor and a bit of a bite. The cream cheese mixture is what really sets these poppers apart, making them creamy and rich with every bite.
For a little bit of extra flavor and crunch, I like to mix in some green onions and bacon bits. These simple ingredients come together to create a cheesy filling that’s packed with flavor and pairs perfectly with the hot jalapeno peppers.
When it comes to peppers, fresh jalapenos are always best – I love getting mine out of the garden in the summer! Be sure to check out the recipe card at the bottom of the page.
Let’s Cook:
Let’s cook brunch!
With the fresh jalapeño peppers prepped and the filling ready, it’s time to assemble our poppers. Start by spooning the mixture of cream cheese into each jalapeño half, filling it just below the rim. You want to make sure there’s enough room for the cheese to melt without overflowing during cooking.
Once the jalapeño halves are filled, sprinkle a pinch of shredded cheddar on top of the cheese filling. This adds a nice layer of gooey, melty cheese that complements the creamy filling inside.
Now comes the best part—wrapping the jalapeño halves in slices of bacon. I use a regular-cut slice of bacon for each popper, making sure to wrap it tightly around the pepper so it stays together during cooking.
To ensure the bacon stays in place, tuck the ends underneath the pepper. These bacon-wrapped jalapeño poppers are now ready for the oven or smoker.
Before cooking, preheat your oven or smoker to 400 degrees F this works as a nice medium heat to cook them quickly, but not fast enough to burn them without cooking the eggs.. I like to use a baking sheet lined with parchment paper or aluminum foil for easy cleanup.
Arrange the poppers in a single layer on the baking sheet, making sure they don’t touch so they cook evenly. For an extra layer of flavor, sprinkle your favorite BBQ rub on top of the bacon. This adds a smoky, savory taste that takes these poppers to the next level.
Cook the poppers in the oven or smoker for 30-35 minutes until the bacon is crispy and the filling is bubbly and golden brown.
Let’s Eat:
Once your bacon-wrapped jalapeño poppers are out of the oven, let them cool on a paper towel-lined plate for a few minutes. You don’t have to let them get all the way to room temperature, but just so you don’t burn your mouth. This helps to drain any excess grease from the bacon and allows the poppers to set slightly before serving.
The combination of the crispy bacon, creamy cheese filling, and the little heat from the hot peppers is absolutely irresistible. These poppers are the perfect party appetizer for any occasion, whether you’re serving them at a brunch, a tailgate, or just as a snack.
One of the things I love about this brunch recipe is how versatile it is. While they’re perfect for brunch, these poppers also make a great snack or side dish for the family. The flavors are so balanced that they appeal to a wide range of tastes, from those who love spicy food to those who enjoy something a bit more savory.
The crispy bacon adds a smoky crunch, while the cheesy filling provides a rich, creamy contrast to the spicy peppers. If you’re serving these for brunch, pair them with a side of sour cream or ranch dressing for dipping. The cool, creamy dip complements the heat of the jalapeños and the richness of the filling, making each bite even more satisfying.
If you have leftovers (which is rare in my house), you can store them in an airtight container in the refrigerator. These bacon jalapeño poppers reheat beautifully in the oven or air fryer. Just pop them back on a baking sheet and bake at 350 degrees F until they’re heated through and the bacon is crispy perfection once again. Avoid using the microwave, as it can make the bacon soggy and lose its crispiness.
In addition to being a great brunch recipe, these poppers are also fantastic for game day or any time you’re looking for a perfect party appetizer. They’re easy to make, full of flavor, and always a crowd-pleaser. Plus, they’re a great way to use up any fresh jalapeños you might have on hand. If you’re a fan of spicy food and delicious recipes, these Bacon, Egg & Cheese Jalapeno Poppers are a must-try. They’re bound to become one of your favorite recipes for any occasion.
So, the next time you’re planning a brunch or a party, give this brunch recipe a try. Grab your fresh jalapeño peppers, bacon, and cheese, and get ready to enjoy a dish that’s as fun to make as it is to eat. Whether you’re serving them as a snack, a side dish, or the star of your next tailgate, these Bacon, Egg & Cheese Jalapeno Poppers are sure to be a hit with everyone.
