Bacon Egg & Cheese Jalapeno Poppers
Ingredients
- 4 whole JalapeƱos halved and cored
- 2 Eggs
- 2 tablespoon Milk
- 8 slices Bacon regular cut
- BBQ Rub to taste
- ¼ teaspoon Salt
- ¼ teaspoon Pepper
- 1 Cup Shredded Cheddar Cheese
Instructions
- Preheat oven or smoker to 400F
- Slice JalapeƱos in half long ways, don't cut off top or bottom
- Remove core and seeds from each jalapeno half
- Combine eggs, salt, pepper, and milk and whisk well to incorporate
- Spoon eggs into jalapeno canoe to about ¾ of the way full
- Add a pinch of shredded cheese into the eggs
- Holding level, wrap each egg and cheese filled pepper in a slice of bacon. Make sure the ends of the bacon are on the bottom.
- Place on wire rack and cover liberally in your favorite BBQ seasoning
- Cook in smoker or oven for 30-35 minutes
