These are the best for stuffing and wrapping because they hold up well during cooking. Start by slicing each jalapeño in half lengthwise, being careful not to cut off the tops or bottoms.

This keeps everything together once we start stuffing and wrapping. With a paring knife, remove the inner membranes and seeds from each jalapeño half. If you’re sensitive to spicy peppers, it’s a good idea to wear gloves during this step to avoid any uncomfortable burns from the spicy oils.

Now, let’s get the filling ready. In a small bowl, combine softened cream cheese with a touch of garlic powder to create a tangy, creamy base for our filling. I love adding some sharp cheddar cheese to this mixture for extra flavor and a bit of a bite. The cream cheese mixture is what really sets these poppers apart, making them creamy and rich with every bite.

You want to make sure there’s enough room for the cheese to melt without overflowing during cooking.

Once the jalapeño halves are filled, sprinkle a pinch of shredded cheddar on top of the cheese filling. This adds a nice layer of gooey, melty cheese that complements the creamy filling inside.

Now comes the best part—wrapping the jalapeño halves in slices of bacon. I use a regular-cut slice of bacon for each popper, making sure to wrap it tightly around the pepper so it stays together during cooking.

To ensure the bacon stays in place, tuck the ends underneath the pepper. These bacon-wrapped jalapeño poppers are now ready for the oven or smoker.

Before cooking, preheat your oven or smoker to 400 degrees F this works as a nice medium heat to cook them quickly, but not fast enough to burn them without cooking the eggs.. I like to use a baking sheet lined with parchment paper or aluminum foil for easy cleanup.

Arrange the poppers in a single layer on the baking sheet, making sure they don’t touch so they cook evenly. For an extra layer of flavor, sprinkle your favorite BBQ rub on top of the bacon. This adds a smoky, savory taste that takes these poppers to the next level.

Cook the poppers in the oven or smoker for 30-35 minutes until the bacon is crispy and the filling is bubbly and golden brown.

Bacon Egg & Cheese Jalapeno Poppers

Ingredients

  • 4 whole Jalapeños halved and cored
  • 2 Eggs
  • 2 TBSP Milk
  • 8 slices Bacon regular cut
  • BBQ Rub to taste
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 Cup Shredded Cheddar Cheese

Instructions

  • Preheat oven or smoker to 400F
  • Slice Jalapeños in half long ways, don't cut off top or bottom
  • Remove core and seeds from each jalapeno half
  • Combine eggs, salt, pepper, and milk and whisk well to incorporate
  • Spoon eggs into jalapeno canoe to about 3/4 of the way full
  • Add a pinch of shredded cheese into the eggs
  • Holding level, wrap each egg and cheese filled pepper in a slice of bacon. Make sure the ends of the bacon are on the bottom.
  • Place on wire rack and cover liberally in your favorite BBQ seasoning
  • Cook in smoker or oven for 30-35 minutes
