Preparation Steps

The foundation of any great bacon waffle starts with quality ingredients and proper preparation. Here’s what you’ll need:

  • Waffle Batter: Use a homemade waffle recipe or your favorite waffle mix.
  • Candied Bacon: Thick-cut bacon glazed with maple syrup, brown sugar, and vanilla extract.
  • Waffle Iron: Choose a type of waffle maker that suits your preference—a regular waffle maker or one with deeper pockets like a Belgian waffle maker is what I used here.

Prepare the Candied Bacon

  • Preheat your oven or smoker to 350°F.
  • Mix brown sugar, maple syrup, vanilla extract, and water in a large bowl.
  • Lay the bacon on a wire rack over a baking sheet.
  • Brush the glaze over the bacon and cook until caramelized and crispy.

Prepare the Waffle Batter

  • In a large bowl, combine your dry ingredients and mix until smooth.
  • Add a secret ingredient if desired, like a splash of real vanilla extract.
  • Fold in chopped pieces of candied bacon.

Cook the Bacon Waffles

  • Preheat your waffle iron (electric waffle iron or cast iron).
  • Pour the batter evenly into the waffle maker.
  • Cook until the waffles are golden brown and crispy, with deeper grooves and larger squares.

Cooking Techniques and Tips

The cooking process for bacon waffles is straightforward, but a few tips can make a big difference.

  • Type of Waffle Iron: A type of waffle maker with extra-deep pockets works best for holding the bacon and maple syrup.
  • Fluffy Texture: For fluffy waffles, make sure not to overmix the batter.
  • Sweet Topping: Drizzle your waffles with real maple syrup and add a dollop of fresh fruit or fresh berries.
  • Savory Waffles: For a savory waffle twist, add shredded cheese to the batter.
  • Consistency Matters: Use the right amount of batter to achieve a checkered impression pattern.

Troubleshooting & Common Mistakes

Even the best recipes can go wrong without attention to detail. Here are common mistakes to avoid:

  • Mistake 1: Wrong Waffle Iron Type
A smaller waffle iron may not produce the deeper grids needed for bacon.
  • Mistake 2: Overcooking the Bacon
Bacon should be crispy but not burnt. Keep an eye on it during the cooking process.
  • Mistake 3: Skipping Rest Time
Let the waffles sit for a minute after cooking to allow the fluffy texture to set.

Pro Tips for the Perfect Bacon Waffle

  • Use Lots of Butter: Melt lots of butter over your freshly cooked waffles.
  • Deeper Pockets: Choose a waffle iron with deeper grids for a better hold on the toppings.
  • Add Toppings: Try fresh berries, sweet toppings, or even a drizzle of apple juice glaze.
  • Smaller Pockets: For thinner waffles, use a thin waffle setting.
  • Savory Twist: Experiment with savory waffles by adding cheese or herbs.

Serving Suggestions

Bacon waffles are versatile and can be served in a variety of ways:

  • Classic Style: Drizzle with maple syrup and top with a pat of butter.
  • Sweet and Savory: Serve with French toast on the side.
  • Brunch Platter: Pair with eggs, traditional waffles, or American-style waffles.

Conclusion

Making the perfect bacon waffle is all about balancing flavors, textures, and the right type of waffle maker. Whether you’re using a regular waffle maker or a Belgian waffle batter in an electric waffle iron, the results are sure to be a hit. With lots of butter, real vanilla extract, and crispy candied bacon, every bite will deliver that perfect mix of sweet and savory.

Ingredients

  • 1 C Waffle Batter premixed
  • 1/2 C Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 lb Bacon thick cut
  • 1 TBSP Water
  • 3 TBSP Maple Syrup real, not table syrup

Instructions

Candied Bacon

  • Preheat oven or smoker to 350F
  • In a mixing bowl, combine Brown Sugar, Vanilla Extract, Maple Syrup & Water & mix well to combine
  • Lay bacon on wire rack closely but not touching, and brush the glaze from above over the top of the bacon liberally to fully coat.
  • Place in oven or smoker on the wire rack sitting on top of a baking sheet lined with foil or parchment paper for easy clean up
  • Cook for 40-45 minutes, but start checking them at 30 minutes. The cooking time on this can vary significanly based on a number of factors. Bacon is done when it's a deep amber color but not burnt. You may get a slight char on the ends, this is normal.
  • When done, remove from heat, and let cool on the counter for 10-15 minutes. This will help the bacon firm and crisp up as the sugars cool and caramelize.

Waffle

  • Use a ready mix waffle mix, and cook to directions on the package add 2-3 TBSP of chopped candied bacon in the waffle batter when cooking. Top with my Candied Bacon Butter and maple syrup if desired!
