Let me tell you, these Cinnamon Roll Breakfast Bombs might just be one of the best things I’ve ever made with a can of cinnamon rolls. They’re the kind of breakfast food that stops everyone in their tracks when they smell it coming out of the oven. The combo of sweet cinnamon roll dough and savory sausage, and the cheese combo is truly unreal.

Why You’ll Love This Recipe

First off, these Cinnamon Roll Breakfast Bombs look and taste like something you’d get from a diner, but they’re made right at home. They come out golden brown and packed with flavor – that mix of maple syrup sweetness and savory sausage is everything. And let’s be honest, the best part is how insanely easy they are to make.

A hand wearing a black glove presses down on a small round piece of dough—soon to become cinnamon roll breakfast bombs—on a wooden cutting board, with another piece of dough in the background.

You can prep the cinnamon roll breakfast bombs ahead of time or whip them up fresh in the morning. They’re also totally customizable with different fillings if you want to switch it up. This recipe is perfect if you’ve got picky eaters, guests, or just want to change up your usual breakfast food routine.

Ingredients / Tools You’ll Need

  • 8 cinnamon rolls (Pillsbury or similar)
  • 8 breakfast sausage patties (pre-cooked)
  • 8 slices American cheese
  • 1/4 cup granulated sugar
  • 1/4 cup ground cinnamon
  • 1/8 tsp salt
  • 1/2 tsp ground nutmeg
  • Baking sheet and parchment paper
  • Flat plate for coating
  • Wire rack (optional but recommended)

Instructions

Preparation:

Preheat your oven to 350°F and line your baking sheet with parchment paper. Start by cooking your sausage patties however you like – I use a skillet until they’re crispy around the edges. As they finish cooking, add a slice of American cheese on each one so it melts right on top.

Raw sausage patties are arranged on a black Lodge griddle, ready to be cooked alongside delicious cinnamon roll breakfast bombs. The patties are evenly spaced, and the griddle surface is clean with the Lodge brand name visible in the corner.

Leave them to dry on a paper towel on top of a plate. Open your can of cinnamon rolls and separate them, then butterfly each one in half without cutting all the way through. Lay them open and get ready to build.

Mix the cinnamon, sugar, salt, and nutmeg on a flat plate – this is your coating mixture. Once everything is ready, place a cheesy sausage patty inside each butterflied cinnamon roll. Seal the edges by pinching them together all the way around to create your cinnamon roll bomb.

Four hamburger patties, each topped with a slice of melted cheddar cheese, are cooking on a greasy griddle. A few more patties and some cinnamon roll breakfast bombs are partly visible on the right side of the image.

Cooking:

Gently roll each of your Cinnamon Roll Breakfast Bombs in the coating mix until fully covered. Place them on your prepared baking sheet with a little space between each one. Bake for 15 to 20 minutes or until golden brown and puffed.

If you like, you can transfer them to a wire rack right after baking so the bottoms don’t get soggy. If you’re feeling extra, go ahead and drizzle the cinnamon roll frosting that came in the package right on top.

Serving Suggestions

Serve these warm straight out of the oven with a drizzle of maple syrup on top. They pair perfectly with a hot cup of coffee or even a mimosa if you’re feeling fancy. These Cinnamon Roll Breakfast Bombs are also great for breakfast on-the-go or brunch with friends.

You can even slice them in half for bite-sized breakfast bombs on a platter. They taste just as good reheated the next day if you’ve got leftovers. And yes, they’re even better dipped in extra maple syrup – trust me on that.

Recipe Notes & Pro Tips

If you want that outer sugar crust to really pop, brush each roll lightly with melted butter before rolling in the cinnamon sugar mixture. Using a wire rack to cool them prevents sogginess and helps that golden brown coating stay crisp.

A gloved hand rolls a piece of dough in cinnamon sugar on a blue and white patterned plate, set on a wooden surface.

One thing I’ve learned – don’t skip sealing the edges completely or the cheese will leak out, some is ok. And if you’re using air fryers, make sure not to overcrowd the basket or they won’t cook evenly.

Variations

Want to get wild? Try swapping the sausage for crispy bacon or ham. Add a spoonful of apple pie filling inside before sealing to turn them into an apple cinnamon roll bomb situation – total game changer. You could even sprinkle some chopped nuts or use different cheeses depending on your mood.

Five unbaked, round cinnamon roll breakfast bombs coated in cinnamon sugar are spaced out on a baking sheet inside an oven, with the oven racks and fan visible in the background.

If you’re into sweet heat, a pinch of cayenne in the sugar coating brings a surprising little kick. Or go dessert-style and ditch the breakfast entirely – just stuff with cream cheese and apple pie filling for a dessert twist on Cinnamon Roll Breakfast Bombs. You can also drizzle them with flavored syrups like maple pecan or caramel right before serving.
