Delicious Sweet & Spicy Chicken Skewers that you’ll love!

Chicken Skewers are an ultra versatile and easy way to feed the family on a busy weekend night, or to feed crowd crowd for a get-together. This super easy and delicious chicken skewer recipe was made using Organic Chicken from Butcher Box. I’m a huge fan of their products because the meat is always super high quality, and they source from farms and ranches that take great care of the animals and care about the environment.

Let’s Prep:

Let’s get the chicken skewers ready!

This is a super easy recipe that only involves minimal preparation and turns out delicious in not time. My recommendation to you is to get your chicken in the marinade in the morning, or you can leave it overnight, then when you’re ready to assemble and grill – it’s all right there for you.

Otherwise, the prep on this dish is really simple. Slice your red bell peppers, and pineapple and prepare the ingredients for your glaze and you’re done!

Let’s Cook:

When it’s time to grill these place the chicken skewers directly over the heat, whether it’s charcoal or propane and cook them until your chicken begins to get a little bit of a char on them. You don’t want to try to cook them all the way through at this point, because you’ll get off-putting flavors of burnt chicken and veggies, however a nice char will get your started. At this point you can flip them and start basting with the glaze that you’ve put in the grill with the food but not over the direct heat.

You can glaze the chicken skewers as often as you’d like to get the flavor that you’re wanting, however you’ll want to wait about a minute in between each glaze to let it set. Otherwise you’re just dripping liquid on top of liquid.

Let’s Eat:

When the chicken is cooked through remove the skewers from the grill and drizzle with sriracha may and sesame seeds. Serve with a side of rice, and your choice of veggies and you’ve got a quick and easy meal for the entire family!

Sweet & Spicy Chicken Skewers

Ingredients

Chicken Marinade

  • 1 C Pineapple juice
  • 2 TBSP Honey
  • 2 TBSP Soy Sauce
  • 1 TBSP Garlic minced
  • .5 TSP Red Pepper Flakes

Glaze

  • 3 cloves Garlic minced
  • 1/4 C Honey
  • 1/4 C Soy Sauce
  • 2 TBSP Apple Cider Vinegar
  • .5 TSP Red Pepper Flakes
  • 1 TBSP BBQ Sauce
  • 1 TBSP Pineapple Juice
  • 3 lbs Chicken Tenderloin sliced into thirds
  • 1 Red Bell Pepper
  • 6 Pineapple rings cut into thirds
  • Sriracha Mayo optional, to taste
  • Sesame Seeds optional, to taste

Instructions

  • Prepare all ingredients in marinade and add chicken, mix well
  • Marinade for 4 hours – overnight
  • Preheat
  • Prep pineapple and red bell pepper
  • Soak Skewers in water for 10-15 minutes
  • Assemble skewer with chicken, pineapple, bell pepper
  • Season with your favorite all purpose seasoning
  • Mix all glaze ingredients together and place on grill over indirect heat
  • Place skewers on grill over direct heat, and cook until chicken slightly chars
  • Flip and start basting with glaze. Wait 1 minute between basting
  • Cook until chicken is cooked through to a minimum internal temp of 165F
