This bacon wrapped pickles recipe is one of the best that I’ve tasted and made. That’s really saying something. When I found out about Kaylin & Kaylin Pickles I was really excited with the different flavor options, and really wanted to create something unique. Luckily they’ve got these Honey Mustard pickle chips, which are absolutely perfect!

To set the scene for you, I’m not a fan of mustard. In fact, I hate it. It’s one of the few food items that I don’t like. I’m a ketchup on hot dog kind of guy. I was blown away when I tried these pickles. The pickle flavor is strong, and the honey mustard flavor is subtle yet, it’s there and it’s delicious. The subtlety of the flavors meld together into a perfect bite. I hope you enjoy this bacon wrapped pickles recipe as much as me and my family do!

Let’s Prep:

Prepping this recipe couldn’t be simpler. Make sure you gather all of your ingredients and tools needed. Ingredients are super-simple. Honey Mustard Pickles, bacon, a bag of small bar pretzels, and your favorite BBQ Rub or seasoning.

I chose the Queen Bee seasoning because of it’s flavor profiles of sweet, yet a touch of spice, and a touch of salt. That matches the flavors of the finished product perfectly tying all flavors together perfectly.

Pro Tip for when you’re making this. Remove your pickles from the jar with tongs and put into a bowl close by to work out of. The last thing that you want to do is to contaminate your entire pickle jar with raw bacon grease as you’re putting them all together. I’ve done this before and won’t make that mistake again. Don’t risk having to throw away such a delicious jar of pickles!

As you continue to prep your items, make sure you have a clean surface to work off of. Since we’re working with bacon, be diligent that you’re not cross-contaminating with any other foods. As mentioned before this is a simple bacon wrapped pickles recipe in which we lay down a half strip of bacon, and put the honey mustard pickle chip on top, followed by a pretzel, then wrap the ends over to contain it all.

The beauty of this bacon wrapped pickles recipe is that when you lay the bacon down on the wire rack with the loose / seam side at the bottom, the bacon wrapped pickles seal themselves up and you don’t have any curling of the bacon.

Let’s Cook:

Once they are all put together, it’s time to put them wrapped side down on the wire rack. This is the perfect place to season up the bacon wrapped pickles as well. I like to use a tray underneath the wire rack to catch the loose seasoning as shown.

I prefer to use the wire rack as it’s easier to move these bacon wrapped pickles all at the same time. It makes it much easier to move on and off the heat, and will allow the bacon wrapped pickles to cook more uniformly as well so you’re not spending additional minutes taking the bacon wrapped pickles on and off.

You can cook these in an oven, or smoker at the same time and temp. I prefer to do it this way in the oven as well because it helps the bacon to “warm up” slowly instead of blasting it with 400F+ heat right off the bat that will shock the bacon and make it want to tense up too much, and potentially not look as good for serving.

They’re cooked! Time to eat. I like to serve this dish hot with a 50/50 mix of ranch and Dijon mustard for serving. This incorporates the flavors of the pickles, and incorporates one of my favorite condiments: Ranch dressing, which in my opinion is a staple with bacon wrapped pickles.

Ingredients

  • 32 Sliced Pickle Chips Kaylin & Kaylin Honey Mustard
  • 1 lb Bacon Regular cut, not thick
  • 32 Pretzels small, bar style
  • 2 TBSP Ranch Dressing
  • 2 TBSP Dijon Mustard
  • BBQ Rub / Seasoning Queen Bee

Instructions

  • Preheat oven or smoker to 250F
  • Remove Bacon from packaging and slice in half
  • Wrap 1 pretzel, and 1 pickle chip in a half slice of bacon
  • Season liberally with Queen Bee Seasoning
  • Place bacon wrapped pickles in oven, or smoker for 20 minutes
  • Increase temperature to 400F and cook for 25-30 minutes, until bacon is crispy to your liking
  • Mix equal parts ranch, and dijon mustard for dipping sauce
  • After removing from heat, allow to cool for 5-10 minutes before enjoying
