Ingredients And Tools

To make these bacon wrapped brie cracker bites, you’ll need:

Ingredients: 1 Lb Bacon, Sliced In Half; Brie Cheese, Sliced To Fit Crackers; 24 Club Crackers; ¼ C Hot Honey; Blazing Star Porkin Seasoning, To Taste.

Rectangular pieces of raw pork belly, coated with red seasoning, are arranged on a wire rack. A container of Blazing Star PorkN Rub & Seasoning is placed on the right side of the rack.

How To Make It

Preheat your smoker to 400°F. Put a slice of brie on each cracker, then wrap each cracker with half a slice of bacon, tucking the ends underneath to hold everything together. Arrange the wrapped crackers on a wire rack set over a baking sheet and season lightly with Blazing Star Porkn seasoning. Smoke the bites for about 20 to 25 minutes until the bacon turns a dark amber color and the fat is rendered.

Brush hot honey over the tops and return them to the smoker for another ten minutes so the honey glazes. Let the bacon wrapped brie bites rest for 10 to 15 minutes so the crackers firm up and the cheese cools slightly, then serve warm.

Serving Tips And Variations

Serve these bites straight from the after they've rested for best experience. They pair well with chilled white wine or a crisp beer. If you’d like to switch things up, try using different cheeses like camembert or a sharp cheddar. You can also add a thin slice of jalapeño under the bacon for a little heat or swap the hot honey for maple syrup if you prefer a milder sweetness.
