Important to note: use white sugar, instead of brown sugar – but a drizzle of hot honey goes a long way for this delicious appetizer

Let’s Eat:

If you have any leftover, store them in an airtight container, and store in the fridge. This bacon crackers recipe, has well… bacon, that while it’s good as leftovers, it needs to be refrigerated, as you would any other bacon you cook.

Variations:

These are delicious with a pad of cream cheese under the bacon, and/or a sprinkle of black pepper on top. If you want to add to the spiciness with a little different flavor, you can use cayenne pepper as well to your taste.

Jalapeno Jelly Bacon Crackers

Absolutely delicious twist on a classic!

Ingredients

  • 6 Jalapeños finely diced
  • 1 C White Sugar
  • 4 TBSP White Vinegar
  • 16 Club Crackers
  • 1 lb bacon sliced in half
  • 1 tsp salt

Instructions

Jalapeno Jelly

  • Finely dice your jalapeños and set aside
  • Add sugar, salt & vinegar together in a pot/saucepan
  • Heat on medium and allow to come to a boil, stirring often
  • After boiling, simmer for 10 minutes to allow to thicken
  • Remove from heat when thickened to your liking

Bacon Wrapped Crackers

  • Preheat smoker to 350F
  • Wrap each cracker with a piece of bacon, make sure seam is on bottom
  • Place on wire rack with 1 tsp of the jalapeno jelly on top of each
  • Add into preheated smoker (or oven) for 30-35 minutes
  • Allow to cool for 10 minutes before serving
