Let’s Prep:
Grab your bacon and jalapeno!
First, let’s gather all of our ingredients together. Luckily for all of us, there aren’t many required for this awesome recipe. The starts of the show are the jalapeños and bacon. The bacon wrapped crackers are amazing on their own. We’re going to level this up by adding a spicy and sugary mix to these and make them so much better!
Once you have all of your ingredients prepared and ready to go, first we’re going to start off by making our jalapeno jelly. This recipe doesn’t get any easier, but you do need to keep a careful eye on it to make sure that the sugar doesn’t burn as it’s being heated. More on that soon.
Pro Tip: When working with jalapeños, I always like to use these gloves to make cleanup a piece of cake.
Let’s Cook:
It’s time for this delicious snack to start coming together!
Once you’ve gotten your jalapeños prepared and finely diced, grab your favorite sauce pan and start adding your sugar, salt and vinegar and get to cooking. It’s at this step that you want to be vigilant about stirring, maybe once every 90 – 120 seconds or so to make sure that the sugar won’t burn. Boil, then allow it to simmer to thicken up.
Once your jalapeno jelly is where you like it, it’s time to get our crackers wrapped in bacon. This is a simple process that is helpful to get right from the beginning. Meaning, take the time to get your first piece of bacon cut correctly, then you can use that as a template for the rest of the of the cuts, and you’ll have nice uniform pieces.
Now that we’ve gotten everything together, let’s cook these in our preheated smoker. You can also cook these in the oven as well at the same time and temperature. This is the most common question that I get in the comments of my social media posts: “What if I don’t have a smoker” or “Can I cook these in the oven”.
The answer is yes, you sure can. The only thing that will be different is that you’ll obviously be missing out on the smoke flavor. While I haven’t tested using liquid smoke in this recipe, however that would be one way to overcome that. One thing to note is that if you do use liquid smoke, use it SPARINGLY. It is very strong, and a little goes a long way!
Cooking these are so simple, this recipe doesn’t require much cooking skill and can be done with kids or your family to produce an awesome snack for the big game, party, or get-together. The best part of this is how delicious this is.
NOTE: If you’d like this recipe to very spicy you can dice your jalapeños without removing the core and seeds. The majority of the heat in a jalapeno pepper travels in the veins that the seeds are connected to. (Not the seeds themselves, contrary to popular belief. I like this recipe to have a mild amount of spice to it. Enough to know it’s there, but not enough for it to burn your mouth. Everyone’s spice tolerance and preference is different, so if making for a large group of people you can make them to varying heat levels if you’re willing to make different batches of the jelly.
Let’s Eat:
Once your crackers have come out of the smoker or oven, allow them to rest for about 10 minutes before you eat or serve them. It’ll be difficult to do, but we want the jalapeno jelly to caramelize and cool off before eating them as quickly as we can!

Jalapeno Jelly Bacon Crackers
Ingredients
- 6 Jalapeños finely diced
- 1 C White Sugar
- 4 TBSP White Vinegar
- 16 Club Crackers
- 1 lb bacon sliced in half
- 1 tsp salt
Instructions
Jalapeno Jelly
- Finely dice your jalapeños and set aside
- Add sugar, salt & vinegar together in a pot/saucepan
- Heat on medium and allow to come to a boil, stirring often
- After boiling, simmer for 10 minutes to allow to thicken
- Remove from heat when thickened to your liking
Bacon Wrapped Crackers
- Preheat smoker to 350F
- Wrap each cracker with a piece of bacon, make sure seam is on bottom
- Place on wire rack with 1 tsp of the jalapeno jelly on top of each
- Add into preheated smoker (or oven) for 30-35 minutes
- Allow to cool for 10 minutes before serving
