Now that we have everything we need, let’s start with the prep. Roll out your premade pizza dough on a lightly floured surface. Make sure to roll it out evenly to about a quarter-inch thickness. Once your dough is rolled out, it’s time to cut it into squares. Using a knife or a pizza cutter, cut the dough into roughly 2-inch by 2-inch squares. These little squares are going to be the base of our pizza bites.

Let’s Cook Pizza Bites

With our dough squares ready, it’s time to assemble the pizza bites. This is the fun part, and it’s a great activity to do with kids. They’ll love helping out with placing the toppings and rolling the dough.

  1. Assemble the Bites:
    • On each square of dough, place a few mini pepperoni slices and a mini mozzarella ball. If you’re a cheese lover like me, feel free to add a little extra mozzarella.
    • Sprinkle each piece generously with Italian seasoning. This seasoning will give our pizza bites that classic pizza flavor we all love.
  2. Roll and Shape:
    • Carefully roll each dough square into a ball, making sure to enclose the filling inside. You want to ensure the edges are sealed well so the cheese doesn’t ooze out while baking.
    • Place each dough ball into your greased cast iron skillet or baking dish. Arrange them snugly together, which will help them keep their shape while baking.
  3. Egg Wash and Bake:
    • Brush the tops of the dough balls with egg white. This step is crucial as it will give our pizza bites a beautiful golden-brown finish.
    • Bake in your preheated oven at 400°F for about 15-20 minutes. Keep an eye on them towards the end to ensure they don’t over bake. You’re looking for a crispy, golden brown exterior.
  4. Prepare the Herb Butter:
    • While the pizza bites are baking, let’s prepare the herb butter. In a mixing bowl, combine the softened butter, finely chopped parsley, and shaved garlic. Mix well until everything is well incorporated.

Let’s Eat

Once your pizza bites are out of the oven, let them cool for about 10 minutes. This cooling time allows the flavors to meld together and makes them easier to handle. After they’ve cooled slightly, brush each bite with the prepared herb butter. This adds a rich, buttery flavor and a beautiful shine to each bite.

For the final touch, sprinkle some shaved parmesan cheese on top. The parmesan adds a lovely salty kick and enhances the overall flavor of the pizza bites.
