For this recipe, I like to use whole dill pickles, halved lengthwise for a better bite. You can also use pre-cut pickle spears, but I find that halving them yourself makes for a more balanced pickle-to-bacon ratio. You’ll also need bacon—thick-cut bacon works best here. Thin bacon just doesn’t hold up as well, and it doesn’t give you that satisfying crisp.

Preheat your smoker to 375°F. While it’s heating up, prepare the pickles. Start by cutting both ends off the pickles, then slice them lengthwise to create halves. Next, take a slice of bacon and wrap it tightly around each pickle half. Be sure the ends of the bacon are placed on the bottom so they stay tucked under as they cook. You don’t want your bacon to be curled up on you making the presentation ugly and the bite weird.
Season liberally with Blazing Star Reaper Seasoning as this will add a HUGE flavor profile and will be the perfect balance between the pickle, the bacon and the sauce. Once they are all wrapped up, I like to put them directly on a wire rack to make it easy to move in and out of the smoker. Season them on the rack, then place them in the smoker.
Cooking time can vary widely based on a number of factors such as how thick your bacon is, the temperature your bacon is going into the smoker, and how evenly your smoker cooks. My recommendation is to check your food after about 15 minutes and see how cooked everything is and make any adjustments needed .
You want it to have a nice amber color, but not be so dark that it’s charring. If some pieces are cooking faster than others, rotate them or move them around on the rack. And remember, we’re cooking to perfection here, not to time.
When the bacon is close to done, brush on some of your favorite BBQ sauce. This is where you’ll get that sticky-sweet glaze that just takes these spicy bacon wrapped pickles to another level. Close the lid for another 2-3 minutes to let the sauce set.

Spicy Bacon Wrapped Pickles
Ingredients
- 4 Whole Dill Pickles halved
- 8 slices Bacon
- Blazing Star Reaper Seasoning
Instructions
- Preheat smoker to 375F
- Start by preparing your pickles, cut both ends off and slice long-ways down the middle to halve your pickle
- Wrap each pickle half in a slice of bacon taking care to make sure that the ends of the bacon on the bottom of the pickle so the bacon doesn't curl up while cooking
- Place in smoker and cook for 12-15 minutes or until the bacon is an amber color but not beginning to char or blacken. Brush on BBQ Sauce and close lid to let glaze for 2-3 minutes
- Remove from smoker, let rest for 5 minutes and serve hot

is the temp that same for oven as well as the time?
Yup! It’ll work the same, just without the smoke flavor from the smoker.
