How to Make Pickles in a Blanket
Preparation for this pickle recipe is key to ensuring your Pickles in a Blanket turn out perfect. Make sure you slice the whole dill pickles into quarters lengthwise and cook the bacon until crispy before you get started.

- Prepare the filling: In a bowl, mix together the softened cream cheese, shredded cheddar cheese, crumbled bacon, and ranch seasoning. Make sure everything is well incorporated, so each bite is packed with flavor.
- Preheat the Oven: Preheat your oven to 350°F. This ensures it’s at the perfect temperature when we’re ready to bake our Pickles in a Blanket.
- Lay Down the Crescent Rolls: On a clean surface, unroll the crescent rolls. Spread them out so you have eight triangles ready to go.

- Spread the Cheese Mixture: Take a spoonful of the cheese mixture and spread a thin layer over each crescent roll triangle, starting from the larger end. This creamy layer is going to melt beautifully and wrap around the pickle spear, creating a delicious filling.
- Add the Pickle Spears: Place a pickle spear at the larger end of each crescent roll triangle. The pickle spear should be fully covered by the crescent roll when we roll them up.
- Roll Them Up: Starting from the larger end, carefully roll each crescent roll until it’s fully wrapped around the pickle spear. Place them seam-side down on a baking sheet.
- Egg Wash and Sesame Seeds: Brush each roll with an egg wash. This will give them a lovely golden brown color when they bake. Sprinkle sesame seeds on top for a bit of extra flavor and a nice visual touch.
- Bake: Place the baking sheet in the preheated oven and bake for 13-15 minutes, or until the tops are golden brown.
- Rest: Once they’re done baking, remove them from the oven and transfer them to a plate or cooling rack. Let them rest for about 5 minutes to allow the filling to set and to cool down enough to handle.
Storing Suggestions
If you have any leftovers, store them in an airtight container in the fridge for 2-3 days. Warm them briefly in the microwave and enjoy hot.
Tips & Variations
- Make them vegetarian. If you want to make this pickle snack vegetarian, simply leave out the bacon. The cheesy, creamy filling is still delicious without it.
- Add more crunch. For extra crunch, roll the crescent rolls in crushed pretzels before baking. It adds a nice texture and a bit of salty goodness.
- Spice it up. If you like a bit of heat, mix some chopped jalapeños into the cheese mixture or use spicy dill pickles.
- Add some sweetness. This recipe can be made with any type of pickles. Prefer a sweeter flavor? Try classic bread and butter pickles instead.
How to Serve
These Pickles in a Blanket are best enjoyed fresh out of the oven when they’re still warm and the cheese is perfectly melty. We often like to make them as an appetizer for parties or gatherings. Arrange them on a platter and watch them disappear within minutes.
You can also serve them as a snack with your favorite dipping sauces, like ranch dressing, honey mustard, or even a spicy sriracha mayo.
FAQs
Can you use a different type of dough?
Absolutely! I love the buttery flakiness of crescent roll dough, but you can also use regular biscuit dough or even pizza dough.
Do you have to add the cream cheese filling?
I do recommend it. The tangy cream cheese flavor really works with the tartness of the pickle, and it helps keep the pastry dough from becoming soggy. If you want to try something different, wrap the pickle with a slice of cheese or even ham instead. It will still taste great and may be a little easier, too.
How do you keep the dough from sliding off?
There are a couple of things to keep in mind here. First, you want to make sure the seams of the dough are placed under the pickle when you place them on the sheet pan. This will help hold them in place.
Reduce excess moisture by lightly drying the pickle spears with a paper towel. You also want to make sure the dough isn’t too warm as that will cause the butter to melt out. If your dough is looking a little overly soft, place the dough-wrapped pickles in the fridge to let the butter firm back up before baking.
