Watch Me Make It

If you love grinders, or a chopped sandwich, this chopped Italian sandwich in a pickle bun might be my favorite thing I’ve made all year. I know—pickle bun sounds wild.

The combo of tangy dill pickles and that chopped mixture of cold cuts and veggies is the kind of bite that stops you mid-chew to appreciate what you’re tasing.

Why You’ll Love This Recipe

  • The perfect bite every time: The chopped ingredients make sure you get a little bit of everything—Italian meats, veggies, and cheeses—in each bite.
  • Low carb, big flavor: Skipping the hoagie rolls and going for a pickle bun means you still get that Italian sandwich sensation, just with a different flavor and texture.
  • It’s a game day and meal prep hero: This hearty sandwich can be made ahead and stored in an airtight container for a couple of days.

Instructions

Preparation:

Grab your large cutting board and sharp knife. Slice each dill pickle at a 45-degree angle on both sides to form a V—now you’ve got your pickle bun. Scoop out the middle to create a spot for your sandwich filling, and set them aside.

Now on that same large board, lay out the ham, hard salami, pepperoni, and provolone cheese. Add in the iceberg lettuce, tomato slices, mayo, olive oil, red wine vinegar, and your Italian seasoning. Chop everything up into bite-sized pieces until it becomes a beautiful chopped mixture.

Cooking:

There’s no actual cooking here, and that’s the best thing about it. Just scoop the chopped ingredients into your pickle buns and press them in gently. And that’s it—assembled sandwich magic.

Serving Suggestions:

Serve these right away so the pickle bun stays crisp. They’re killer for lunch, backyard parties, or game day snacks. If you’re feeling fancy, hit ’em with a little drizzle of Italian dressing or hot sauce.

Recipe Notes & Pro Tips

Don’t overfill the pickle bun or things might fall apart. Make sure your chopped ingredients are fine enough to tuck in neatly. And if you’re storing the chopped salad mixture for later, wrap it in plastic wrap or pop it in an airtight container.
