Watch Me Make It

Why This Recipe Works

The idea of using refrigerated biscuit dough instead of traditional graham crackers for the outer layer is where it really comes together. It gives you that soft, doughy goodness while still packing in all the flavors we love. Still crispy, still delicious, just a little unique

Plus, the biscuit dough crisps up beautifully on the grill or in the oven, creating that perfect contrast with the melty chocolate and marshmallow inside. It’s like a surprise party in your mouth.

Ingredients

Let’s talk about what you need for these bad boys:

Refrigerated biscuit dough (I usually go for Pillsbury, but any brand works)
Chocolate pieces (2-3 per bomb, whatever your heart desires)
Marshmallows (1 per bomb, of course)

That’s it! Simple ingredients that you probably already have in your kitchen.

How to Make It

First things first, preheat your smoker or oven to 375°F. This temperature is key for getting that perfect golden brown exterior while ensuring the insides get all melty and delicious.

Next, grab your biscuit dough. Carefully slice each biscuit in half horizontally. Don’t stress if you make a little mess; it’s all going to taste amazing in the end. On the bottom half, place 2-3 pieces of chocolate and one marshmallow. I like to use a mix of milk chocolate and dark chocolate for a little extra depth, but you do you!

Now, cover it up with the top half of the biscuit and gently press the edges together. It’s important to seal them well, or you’ll have a chocolate and marshmallow eruption. If you want to make sure they’re really sealed, you can take a fork and press down on the edges. I sometimes flatten the top in my palm a bit to make sure everything’s tucked in nice and cozy.

Once they’re all sealed, place the bombs on a baking sheet. If you’re using a smoker, I suggest lining it with some parchment paper to make cleanup easier. Smoke or bake for about 15-18 minutes. Keep an eye on them, though. You want them golden brown, not burnt.

When they come out, let them sit for just a minute before diving in. Seriously, they’ll be molten lava inside, and you don’t want to burn your tongue. Interestingly though, not from the marshmallow - you can expect this to melt into the dough and leave the flavor without the huge chewy bite. This is expected and normal - it disappear! (Well I guess it kind of did)

Tips / Variations

Now, if you want to spice things up a little, you can add some extras to your s'mores bombs. A pinch of sea salt on top before baking adds a nice contrast to the sweetness. You could also throw in some peanut butter cups instead of chocolate for a delicious twist.

If you’re feeling adventurous, try adding some crushed nuts or even a slice of banana inside. Just remember, the key is to keep the filling inside the biscuit, so don’t overstuff them.

Serving Ideas

These Smoked S’mores Bombs are perfect for gatherings. Set them out as a fun dessert option at your next BBQ, or make them for a cozy night in with the family. They pair perfectly with a scoop of vanilla ice cream on the side. Trust me; the combination of warm chocolate and cold ice cream is heavenly.
