Why You'll Love This Recipe
First, you get that bold, briny punch from the parmesan pickles, layered with that salty, nutty crunch from the cheese. Second, they crisp up beautifully on a baking sheet, giving you that satisfying crunch without frying.
Best of all? They’re ridiculously easy to throw together—just a few basic ingredients and boom: snack perfection in the form of a parmesan pickle chip. Best of all - it's a low carb option, so eat up!
Ingredients / Tools You’ll Need
- 24 Dill pickle slices (enough to cover a standard baking sheet)
- 6 oz Parmesan cheese, shredded
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Seasoned salt
- ½ teaspoon Black pepper
- ½ teaspoon Dried dill
- 2 tablespoon Ranch seasoning
- Parchment paper
- Olive oil or spray
- Mandolin slicer (if you’re slicing your own white onions or red onions for variations)
Instructions
Preparation:
To get started making the parmesan pickle chips: Preheat your oven to 375°F. In a small bowl, mix together your dry seasoning: a teaspoon garlic powder, a teaspoon onion powder, seasoned salt, pepper, dill, and ranch seasoning. Line your baking sheet with parchment paper, and sprinkle a layer of parmesan cheese as your base.

Now grab your pickle slices and lay them in a grid over the cheese. Keep everything in a single layer—no overlapping. Add some oil over the top and sprinkle your seasoning mix generously over the top, hitting every slice.
Cooking:
Pop the tray into your oven and bake for 10 to 12 minutes. You’ll see the cheese melts quickly, bubbling up before turning that beautiful golden brown. Once it starts crisping around the edges, pull it out and let it cool for 10 to 15 minutes.
Serving Suggestions:
Once cooled, cut or break into chip-sized pieces and serve with your favorite dip—ranch, spicy mayo, or a garlicky aioli. They’re awesome on their own, but stack ‘em next to french fries or sliders for the ultimate party tray. And if you’re feelin’ fancy? Toss in some crispy onion slices or crushed onion ring chips on top for extra crunch.
Recipe Notes & Pro Tips
Use parchment paper—trust me, it makes cleanup a breeze and keeps everything crisp. If you want an even bolder bite, swap in red onions or thinly sliced yellow onions and add them right onto the cheese before baking.
Uniformity is key here—use a mandolin slicer if using whole pickles or if you're slicing anything fresh. That way, everything cooks at the same time and comes out evenly crisp.
Variations
Try this with thinly sliced onion slices layered over the pickles. Or sprinkle some crushed onion ring chips into the cheese mix before baking. You can also swap out the pickles for onion slices completely for a true viral onion chips experience.
Want a heat kick to your parmesan pickle chips? Add cayenne or chili flakes to your seasoning mix. For a smoky flavor, blend in smoked paprika with your parmesan cheese before baking.
These aren’t just a fun snack—these cheesy dill pickle chips are a genius way to reinvent the traditional chip with just a few basic ingredients. Make a batch - you'll be glad you did.
Other ways to cook: I haven't made them in the air fryer or flat top griddle, but the principals would be the same - medium heat, until the cheese is all nice and melted.
