Why This Recipe Works

The magic of this cheesecake pie lies in the simplicity of the ingredients and the way they blend together. First off, you’ve got the graham cracker crust giving it that buttery crunch. Then, the peanut butter adds a rich, nutty flavor that pairs perfectly with the sweetness of the cheesecake filling.

I mean, who doesn’t love a good peanut butter and caramel combo? The salted peanuts on top give that delightful crunch and balance everything out, making this pie a total crowd-pleaser.

Ingredients

A person drizzles caramel sauce over a creamy pie with a graham cracker crust, using a spoon. The pie rests on a wooden surface.

Now, let’s talk about what you’ll need for this Payday Cheesecake Pie. You can easily find these ingredients at any grocery store, and I bet you might already have some of them hanging around in your pantry:

1 Graham Cracker Crust (store-bought or homemade)
1 cup Peanut Butter, melted
1 ¾ cups Milk
1 (3.4 oz) Instant Cheesecake Pudding Mix
2 cups Whipped Topping (like Cool Whip), thawed
1 cup Salted Peanuts
1 cup Caramel Sauce (plus more for drizzle)

A person pours a light brown liquid from a measuring cup into a glass bowl containing a white creamy mixture, all set on a wooden surface.

How to Make It

Let’s dive into the fun part-making this pie! Start by grabbing a large mixing bowl. Whisk together the milk and the instant cheesecake pudding mix. Keep whisking until the mixture thickens up nicely. This is where the magic begins, and you’ll definitely want to keep an eye on it.

Once you’ve got that thickened up, it’s time to stir in the melted peanut butter. Make sure it’s fully combined and smooth, because no one wants clumps of peanut butter in their cheesecake. Then, fold in the whipped topping gently, so it stays nice and fluffy. This is where I get excited because it starts to look so creamy and inviting.

Now, pour this luscious mixture into your graham cracker crust. Spread it out evenly and don’t be shy about getting every last bit into that crust. Cover it up and pop it in the fridge for at least four hours. I know, the waiting can be tough, but it’s totally worth it.

Once the pie is set, take it out and sprinkle on those salted peanuts. Drizzle that caramel sauce generously on top-don’t be shy here, caramel makes everything better! Slice it up, serve it up, and watch those smiles light up the room.

Tips / Variations

I love experimenting in the kitchen, so here are a few tips that might help you make this pie your own. If you want to amp up the peanut flavor, try adding some crushed peanuts into the cheesecake filling. It adds a nice little crunch throughout. You could also swap out the caramel for chocolate sauce if you're feeling adventurous or if chocolate is more your jam.

Another variation could be using a different crust. A chocolate cookie crust would add a nice twist and complement the peanut butter beautifully. And if you want to make it a little healthier, opt for natural peanut butter and a low-fat whipped topping. It still tastes delicious!

Serving Ideas

This Payday Cheesecake Pie is perfect for any occasion. Whether you’re hosting a BBQ, a picnic, or just want a sweet treat at home, it’s a hit every time. I like to serve it with some fresh fruit on the side-strawberries or bananas pair really well. You could also offer extra caramel sauce for drizzling, because let’s be honest, who wouldn’t want that?

Another fun idea is to serve it alongside a scoop of vanilla ice cream. There’s something about the contrast between the cold ice cream and the creamy pie that just works-plus, it looks pretty spectacular on the plate!
