Why This Recipe Works

What I love most about this recipe is how adaptable it is. You can pretty much throw in whatever toppings float your boat. Sure, you can stick to the classic pepperoni and cheese combo, but if you’re feeling adventurous, throw in some veggies or different meats. Plus, the biscuit dough becomes all golden and crispy, while the inside gets gooey and melty. It’s that perfect contrast that makes each bite so satisfying.

Ingredients

A hand places a slice of pepperoni on top of a small round dough with tomato sauce and shredded cheese, on a wooden cutting board.

Here’s what you’ll need to whip these up:

1 can refrigerated biscuits (8 count)
1 cup shredded mozzarella cheese
24-32 slices pepperoni
½ cup pizza sauce (plus more for dipping)
1 tablespoon olive oil or nonstick spray
1 tablespoon butter, melted (optional)
½ teaspoon garlic powder (optional)
½ teaspoon Italian seasoning

How to Make It

A hand holds a spoon with tomato sauce, spreading it onto a round piece of dough on a wooden cutting board, with another dough piece nearby.

The first step is really simple: preheat your waffle maker to medium heat and give it a light spray with olive oil or nonstick spray. I find this helps to get that nice, crispy outside without any sticking drama.

While that’s heating up, take your biscuit dough and separate each biscuit. Gently flatten them out. I usually split them into two thinner layers - this helps with stuffing later. Now, here’s where the fun begins. On one half, add a sprinkle of mozzarella, a few slices of pepperoni, and a little dollop of pizza sauce. You don’t want to overstuff them or else they’ll explode in the waffle maker, and trust me, that’s a mess you don’t want to deal with.

Once you’ve got your toppings on, place the other half on top and press the edges firmly to seal them. Give it a good pinch to make sure they don’t bust open while cooking.

A plate with golden, crispy waffles drizzled with syrup and sprinkled with crushed nuts, placed on a wooden table. The plate has a blue and white zigzag pattern.

Now, carefully place your stuffed biscuit into the preheated waffle maker. Close the lid gently - don't smash it down too hard. You want those biscuits to have a chance to puff up and get all fluffy inside. Cook them for about 3 to 5 minutes. The exact time will depend on your waffle maker, so keep an eye on them. You’re looking for that golden brown color and the smell of melty cheese.

When they’re done, carefully remove them. I like to brush a little melted butter on top and sprinkle some garlic powder and Italian seasoning for that extra touch. It’s like a little flavor bomb waiting to happen!

Tips and Variations

A person holds an uncooked, hand-crimped empanada or pastry over a wooden surface, wearing a dark shirt with a circular design.

Now, let’s talk about some tweaks you can make to really make this recipe your own. If you’re not a pepperoni fan, try crumbled sausage or diced ham. Want to sneak in some veggies? Go ahead! Dice up some bell peppers or mushrooms and toss them in. Just remember to keep the moisture in check so your biscuits don’t get soggy.

For a cheesy twist, you can mix different kinds of cheese. I love adding a bit of cheddar for a sharp bite. Just be careful with the quantities of sauce and toppings; you don’t want to make it too soggy.

Serving Ideas

Two waffle-shaped pieces topped with grated cheese sit on a wooden board, accompanied by a stack of pepperoni slices and a container of red dipping sauce in the background.

These Pizza Stuffed Biscuit Waffles are perfect as a snack or appetizer, but they can also be the star of your BBQ. Serve them hot with extra pizza sauce on the side for dipping. You could even whip up a simple salad to go alongside, especially if you want to balance out all that cheesy goodness.
